Tradition Rouge is a blend of destemmed, separately-vinified Pinot Noir 60%, Trousseau 35%, and Poulsard grown at about 1000 feet at Jura's northern end within the Arbois and Montigny communes. The wine is fermented with indigenous yeasts and aged in large older foudres. After 18 months in barrels, the varietals are blended to achieve the classic Jura style. Although the wine is light in color, the flavors are deep and complex, with alpine berries, savory notes, and fresh acidity. Pair this just like you would any Burgundy or Beaujolais.
