We like Bohigas' regular Cava so much that we tried the family's Rosat and found one of our new favorite sparkling rosés. Made with indigenous Trepat (90%) and Pinot Noir, this Cava sits on the lees for 12 months in a cold, dark cave during the second fermentation. Upon disgorgement, a dosage of 6 g/l is added to create a creamy, supple, not-too-dry bubbly with notes of berry patch candy, raspberry preserves, roses, red currants, and croissants. Rosat Cava is even more flexible in pairing: try Bohigas with tuna or salmon tartare, Mediterranean foods, spicy fare, and desserts, especially fruit-based.
