There's an entire universe of Eaux-de-Vie: nearly every fruit --including tomato-- is turned into brandy, but if we're honest with ourselves, Calvados is head & shoulders above the rest. Then, there's the added historical significance of apples and cider making going back more than 1,000 years in northwestern France. Lemorton Selection hails from the Domfrontais region of Normandy, where a high percentage of pear (apple's relative), at least 30%, is used in the base cider that's distilled in a traveling wood-fired copper still before aging at least three years in old French oak. The flavor has earthy, funky notes beneath pear tarte, herbs, and apple blossoms. Pair Calvados with fish, caviar, desserts, game, and Normandy cheese.
