Eau-de-Vie ("water of life") is the essence of fruit captured from nature and put into a bottle without any coloring, artificial flavors, or syrupy sweetness. Kirsch refers to brandy made of cherries, and in the case of the Etter family distillery in Zug, Switzerland, it takes nearly 20 pounds of cherries to make a single bottle of pure 82-proof brandy. Traditionally taken as a digestif, Kirsch is also an ingredient in fondue and classic desserts.
