Crafted at the last remaining distillery on the Caribbean island of Saint Lucia (300 miles north of Venezuela), Chairman's Reserve is 100% molasses-based rum fermented with native yeast in open concrete tanks for 36 hours, aged in ex-bourbon barrels, and rested in oak vats after blending. The rum is filtered through charcoal to remove color and diluted to 86-proof with purified rainwater. Flavors of fresh sugarcane juice, tropical fruit, pepper, wood tannins, and delicate white miso. Use in Mojitos, Daiquiris, Hemingways, and any fruit cocktail.
