Before retiring, Paul Joseph made Black Maple Hill at the Stein Distillery in Joseph, Oregon. This whiskey was crafted with locally grown rye (75%) and corn, both from the Stein family farm, which are fermented, distilled, aged in white oak, and bottled on-site. Although labor-intensive and expensive, fans of Black Maple Hill wouldn't have it any other way. The final blend here is a 4-5-year, 95-proof Rye, which is loaded with spicy cinnamon, candied almonds, nutmeg, white pepper, dried fruit, maple syrup, and caramel, balanced with enough tannin and wood char for drying astringency. These are the last bottles of Joseph's Rye; unless he sells the brand, these are also the last of Black Maple Hill.
