Equipo Navazos is not a winery or producer. Instead, it is a group of sherry lovers who find forgotten casks of old sherry hiding in Spanish cellars. They bottle multiple versions of each style, highlighting the beauty of this noble fortified wine in its natural state. In fact, "En Rama" means it comes directly from the cask with minor filtration. Inexpensive Manzanilla and Fino can be one-dimensional, while Navazos is complex, mature, salty, and bright with lively acids, plus a touch of truffle, nuts, and enough fruit to fill the palate. It is dry but not puckering and goes with any savory food. This particular wine was taken from the cask in February 2022.
