We've enjoyed lots of European Vermouth, but South Africa has a vermouth tradition dating back to the 19th century. Made from the abundant local wine and unique botanicals, Caperitif was a secret ingredient by the early 20th century and was often mentioned in London's Savoy Hotel cocktail book. However, a beer craze and political issues eventually put Caperitif out of business. Recently, Lars Erik Lyndgaard Schmidt – a Danish mixologist – and winemaker Adi Badenhorst got together and brought this historical Vermouth back to life. So, does the world need another craft vermouth? Caperitif is unique because it is made with Western Cape Chenin Blanc and flavored with 35 different local Fynbos (medicinal plants), spices, barks, fruit, flowers, cinchona, rooibos, and herbs. Part of the batch is aged in oak to heighten the complex flavors in this moderately sweet/bitter recipe. Substitute for any vermouth and add to your Negroni or as a “ghost ingredient” in a Gin & Tonic.
