Revel Cidery of Guelph, Ontario, has an entirely original take on cider. Traditionalists want to know if their apple fizz is Spanish, French, German, English, or New England-inspired and then what heritage apples are used, but Revel doesn't like to be boxed in like that. The owner and cider-maker, Tariq, uses whatever is seasonal and locally available, such as grapes, plums, strawberries, cherries, or flowers. As long as the native yeasts can do their jobs, he will make cider from any fruit.
