Philip Togni's second wine, "Tanbark Hill," is almost half the price of his premier Napa Cab but still comes from the same 10.5-acre estate. Named for a 3-acre plot of primarily young-vine Cabernet Sauvignon, Tanbark Hill is aged nearly two years in barrels (40% new French oak) for a complex, untamed yet elegant, Bordeaux-like Cabernet with high acidity, sturdy tannins, and plenty of dark berry fruit and currants. Tanbark can be cellared for another decade or decanted for immediate drinking with a grilled ribeye.
