Chile was once the destination for inexpensive versions of California wines, but now there is a new wave of natural winemaking featuring international and local varietals. Originally from Spain, the Pais grape (aka Mission) has been in the Americas for 500 years. González Bastías hand-harvests their Pais from a 200-year-old vineyard, presses by hand in zarandas (bamboo sieves), ferments in open-top cement vats, and ages in large old-wood barrels. Matorral is fleshy, fruity, and wild, with notes of plums, blackberries, mint, fennel, and pine on a smooth yet structured finish. Pair with braises, BBQ, grilled meats, and highly spiced dishes.
