About 70 miles west of Sancerre is the region of Cheverny, famous for its 14th-century castle and exciting range of red and white blends. Unlike so many other Sauvignon Blancs, namely from the New World, Emmanuel & Thierry Delaille know precisely how to craft Sauvignon without being overly herbaceous, sour, or fruity. Domaine du Salvard is 85% Sauvignon Blanc with 15% Chardonnay -- it makes sense when you taste it. Sauvignon Blanc contributes citrus zest, limestone, herbs, and acidity, while Chardonnay tempers it with tropical and stone fruit. Pair with fresh goat cheese, seafood, shellfish, salads, vegetables, and poultry.
