Sean Capiaux started his winery in 1994 and has been making benchmark Pinot ever since. His Chimera cuvee is made primarily from Russian River Valley fruit supplemented with 10% Santa Lucia Highlands Pinot. The blend is aged for about one year in French oak (10% new) to yield just over 1000 cases of silky wine loaded with cherries, plums, pomegranates, red licorice, baking spices, black tea, sturdy tannins, and bright acids on an opulent finish. Chimera is a serious wine that matches well with steak, roasts, and hearty mushroom dishes.
