Castle & Key was founded on the grounds of the Old Taylor Distillery in Frankfort, Kentucky. In 1887, Colonel Edmund Haynes Taylor built his distillery to resemble a castle, and it was still one-of-a-kind when it shuttered in the 1970s. A visionary named Will Arvin renovated the property, and in 2014, the old distillery started making tiny batches of whiskey. Batch 1 of the Wheated Bourbon is a mash bill of 73% white corn, 10% wheat, and 17% malted barley aged in oak for five years. The palate is creamy and soft with notes of fresh-cut grass, leather, candy malt balls, dried fruit, sugar cookies, tea, and baking spice. 100 proof.
