Determining which sherries are sweet can be challenging: Cream Sherry is sweet, and Pedro Ximenez (PX for short) is very sweet. Fortunately, Gonzalez Byass tells you right on the bottle that Nectar is "dulce." Its sugars occur naturally through ripening and are further concentrated when the grape bunches are laid out in the sun to dehydrate. This step imparts raisin-like dried fruit flavor to the dense dark wine with notes of praline, honey, plum pudding, grilled oranges, and salted caramel. Serve cool with flan, vanilla ice cream, pecan pie, baklava, and banana pudding.
